The Ice Cream Production Process & Machinery

Mix Preparation & Pasteurization

Raw ingredients: Milk, cream, sugar, stabilizers, emulsifiers, flavors, fruits, inclusions.

Process: The mix is heated for pasteurization and homogenized under high pressure to create a smooth, creamy texture.

Cooling & Aging

Process: The mix is rapidly cooled and held in refrigerated aging tanks to allow ingredients to fully integrate.

Resting time: 4–8 hours to improve body, texture, and consistency.

Freezing & Flavoring

Equipment: Continuous freezers and flavor tanks.

Process: The aged mix is frozen with controlled air incorporation; fruits, nuts, or chips are added inline.

Packaging & Hardening

Process: Ice cream is packaged and transferred to hardening tunnels at −23°C to −29°C for complete solidification.
